Tony Bish is the Hawkes Bay Chardonnay guru. He is a Chardonnay specialist, and has built up a very big reputation on the back of his wines. Tony Bish started off his career at Corbans winery in Gisborne, followed by a ski season at Mt Hutt. Then, after a few vintages here and there and a winemaking degree earned in Australia, he settled back in Hawkes Bay, and founded Sacred Hill with his friends, Mark and David Mason, back in 1986.
Tony Bish Wines are an assortment of different styles of Chardonnay, and his premium Chardonnay’s are centred on his giant, somewhat Taransaud French oak ‘Ovum’ egg, which takes pride of place in the centre of his barrel hall. It's the first of its kind in the Southern Hemisphere. The unique egg-shape has an esoteric ‘natural’ appeal surrounding it, but also its unique shape allows unique convection currents to spread evenly around the egg, accentuating the lees contact with the rest of the wine.
Both the ‘Zen’ and the ‘Golden Egg’ benefit from this style. Alongside these are the Skeetfield, the Heartwood, and the Fat and Sassy. All of Tony Bish’s Chardonnay are unashamedly ‘old-school’ in style; big, brash and buttery.
