Ayrburn Methode Heritage NV is a traditional-method sparkling wine from Central Otago, made by Ayrburn near Arrowtown. It blends Chardonnay, Pinot Noir and Pinot Meunier, the same three grapes used in Champagne. It is a good aperitif, and it suits shellfish and lean fish.
This is Ayrburn's Central Otago sparkling, made the traditional way. Traditional method means the bubbles come from a second fermentation inside the bottle, the same way Champagne is made.
It is a wine for opening before dinner, with oysters, or with a plate of fish on a warm evening. The blend of Chardonnay, Pinot Noir and Pinot Meunier is the same one Champagne uses.

Food to enjoy this with
Sparkling wine with good acidity is a flexible partner for food, and it suits salty and fresh dishes best.
- Fresh oysters
- Prawn cocktail
- Smoked salmon on blinis
- Lean white fish, lightly pan-fried
- Crisp cheese straws and nuts
- Fried chicken, an unexpected one, because the bubbles and acidity cut through the richness
